Chocolate Chip Cookies

INGREDIENTS

  • 50 g dried figs or dates*
  • 30 g coconut oil
  • 100 g almond flour
  • 30 g Dark 70% Gourmet
  • 1/2 tsp vanilla extract
  • A pinch of sea salt
* Preferably use the “ready to eat” variety, which is already soft and juicy, but you can also soak dried ones yourself.

RECIPE

1. Preheat the oven to 180°C and line a baking tray with baking paper.
2. If your figs or dates are very dry, soak them in hot water for a few minutes, then drain as well as possible.
3. Melt the coconut oil.
4. Place all ingredients except the chocolate in a food processor, along with a pinch of salt, and blend until combined.
5. Add the chocolate and pulse a few more times until roughly chopped and mixed through.
6. Roll the dough into 12 small balls and flatten them on the baking tray.
7. Bake for 15 minutes. If you want them extra crisp, flip them halfway through or briefly at the end.
